Cumin is widely used in Nepali kitchens, mainly as a flavoring agent and as a condiment in certain dishes. All Curries have cumin in them in small quantities. Cumin gives these dishes an aroma that serves to enhance the dish further. Cumin has a penetrating musty, earthy flavor with some green, grassy nuances.
